MCFC CSA 2015 Recipe: Chiapas Salsa Verde recipe

FullSizeRenderAt our last tasting LOCAL FOOD TASTING: TRADITIONAL MAYAN FOODS last Friday September 4th with our CSA core member Ana Maria Nichim Luna Toporek, she made delicious tamales and shared her secret to a delicious salsa verde inspired by the indigenous tastes of the highlands of Chiapas, Mexico. “No need to cook the tomatillos; puree them raw with an avocado.” Creamy! As one member said at the tasting, “Mind Blown.” Yes, it’s that easy to make a delicious traditional salsa verde!
Here is Ana Maria’s recipe:

Chiapas Salsa Verde

6 Tomatillos
1 Avocado
1 Seeded Jalapeño
1 Clove of garlic
1/2 a bunch of Cilantro
Salt to taste

Chop tomatillos in quarters and add them to a blender, along with all the ingredients. Blend until smooth. Salt to taste.

If you are out of tomatillos, check the farmers market for additional for your recipe.
