What is the difference between creamed spinach and the Indian dish, palak paneer; or bruschetta and salsa? Largely, herbs and spices. In this class we explore the nuances (and health benefits) of using exotic and domestic herbs and spices. We will also discuss the philosophies behind flavoring food that enable cooking creativity and improvisation to unfold. Practical demonstrations, information, recipes, and tastings will be provided.

Bio: Joshua J. Hajicek is a Ph.D. candidate at the CUNY Graduate Center where he studies the biophysics of the inner ear. For over a decade he studied Ayurveda, eastern philosophy, and yoga. He was a Sous Chef at the Himalayan Institute’s Ayurvedic kitchen in Honesdale, PA, and tenured as a vegetarian cooking instructor at the former East West Books in NYC. He also studied pastry arts under Chef Laura Baldassarri and worked for Abigail Kirsch at NYC’s Pier Sixty and the Lighthouse at Chelsea Piers.
