What to do with all those peppers?

IMG_6443First things first, did anyone else receive a bonus addition to their veggie box yesterday?  I was quite surprised to find this little guy hanging out on this gorgeous yellow pepper!

IMG_6469Second, what will you be doing with all of those peppers???  I cut up a bunch of peppers last night that were overly ripe or spotted and roasted them hoping I’d come up with a plan.  Looks like I am going to try a recipe for Muhammara today.  These are the ingredients that get whirred in a food processor to make a yummy dip.

1 tablespoon crushed red pepper 
flakes or 1 small red chile
1/2 teaspoon ground cumin
3/4 cup walnuts, toasted
1/4 cup whole-grain bread crumbs
1/4 cup extra-virgin olive oil
, plus more to serve
2 tablespoons pomegranate molasses
1/4 cup tomato paste
2 to 3 roasted peppers
1/2 to 1 cup warm water
1/2 teaspoon fine-grain sea salt

  1. On tap for us: some roasted tomato and pepper soup for the freezer, sausage, peppers and onions for tomorrow’s football frenzy, and some stuffed baby peppers as an appetizer for our cocktail party tonight. Can you ever have too many peppers?? 🙂
