Recipe: Purple Cow smoothie

Inspired by the old-fashioned drink made with grape soda and vanilla ice cream we make a healthy smoothie from local ingredients.

one frozen banana
1/2 cup frozen berry medley
grape juice concentrate ( see recipe below)
filtered water to blend
ice (optional)

In a blender, puree all ingredients except the yogurt.

Pour a 1/4 cup of vanilla yogurt into a tall glass. We used local Klein’s vanilla maple yogurt sold by Havenwood Farms. Pour 1/2 to 3/4 cups of Purple Cow smoothie into glass. Serve immediately with a straw.

Concord Grape juice concentrate
Put concord grapes into a pot. mash slightly with a potato masher or back of a spoon. Cook for 10-15 minutes , mashing every so often. Strain with a colander or food mill, removing seeds and skins. Add sweetener if you wish. Dilute to taste. Freezes well.
