Recipe: Green Hummus

Green Hummus

Another great no cook recipe for hot summer using our csa produce from this week.


  • 3 1/2 cups of cooked garbanzo beans ( 2/ 15 oz cans)
  • 2 cup of spinach, loosely packed
  • 1 cup of arugula, loosely packed
  • 1/4 cup of cilantro
  • 1/4 cup of diced green onion
  • 1 clove of garlic
  • 1 cup of extra virgin olive oil
  • 1/4 cup of fresh lemon juice
  • Sea salt & fresh cracked black pepper to taste

Combine the spinach, arugula, cilantro, green onion, and garlic in a food processor and blend. With the food processor on, stream the olive oil in and add the garbanzo beans. Season to taste. From Honestly Yum.
