Recipe: Patty-Pan Pan

Patty Pan or sunburst squash is a variety of summer squash with a beautiful scalloped shape.

My daughter asked for Zucchini Bread. We only had patty pan squash left. Using a basic zucchini bread recipe we used the patty pan squash. But what do we call it? Zucchini bread, but its not a zucchini… summer squash bread? patty-pan bread? patty-pan cake? how about Patty-Pan Pan? Pan (pronounced more like pon) is the word for bread in Spanish and can be used to cover the range of breads and sweet breads in Latin America.


Zucchini Bread

Called a bread but really a sweet cake!

1 & 1/2 cup grated zucchini
1 &1/2 cups whole wheat flour
1/2 cup oil
1/2 tsp. baking soda
1/2 cup sweetener
1/2 tsp. baking powder
2 eggs
1/2 tsp. salt
1 tsp. vanilla
1 & 1/2 tsp. cinnamon
1/2 cup nuts (optional)

Mix wet ingredients together. Sift dry ingredients together and add to liquid ingredients. Bake in greased loaf pan at 350 degrees for 45-60 minutes. Cool in pan for 10 minutes.

Eat at tea time or eat for dessert !
Versatile recipe: Add raisins or chocolate chips.  Easy to change the recipe to a carrot cake by substituting the zucchini for carrot or make a “healthy” chocolate cake by adding 1/4 cup of cocoa powder.
