1 large bunch of greens or 2 bunches of spinach choppped
1 bunch of green onions or 1 large onion, chopped and sauteed in olive oil
1 tsp oregano
1/2 cup masa or corn meal
1 1/2 whole grain flour ( or half and half)
3/4 to 1 cup cheddar cheese
4 tsp baking powder
1 tsp salt
1/4 tsp cracker pepper
Preheat oven to 350 degrees. Coat a 13n9 inch baking dish with oil or butter.
In a large bowl combine spinach eggs, onions, herbs, flours, cheese , salt and pepper.
Pour into prepared baking dish and bake for 45 minutes or until top is turning golden brown and mixture is set. Sprinkle with additional cheese. Let cool in dish. Cut into 2 squares. Serve with soup and salad.
For Mediterranean flavor replace oregano and cheddar with 1/2 tsp mint, 1/2 tsp dill and feta cheese.
