Ricotta stuffed pears

One of our members has a bountiful Asian pear tree in her front yard. This recipe, delicious made with any type of pear or apple, made a wonderful dessert with the bag of Asian Pears we graciously received as a gift. Try this recipe with the fruit from the farm and local honey.

Ricotta Stuffed Asian Pear

Ricotta Stuffed Asian Pears

  • 4 ripe Asian pears, or any variety of apples or pears
  • 1 cup ricotta cheese
  • 1 tablespoon honey (& for drizzling)
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ground ginger
  • 1 teaspoon vanilla extract
  • Cinnamon for dusting
  •  Pat of butter ( optional)

Preheat oven to 375 degrees. Slice pears in half. Using a spoon, remove the seeds and scoop a divot out the center of each pear half, making it large enough to hold at least a tablespoon of filling. Place in casserole dish. Cover with foil, and bake until beginning to soften, about 20 minutes.  Drizzle with honey and dot with butter (optional). In a small bowl, mix ricotta and honey until they are completely combined. Mix in cinnamon and ginger. The honey and spices are minimal to highlight the flavor of the pears but add more honey if you like the filling more like pudding. Fill the center of each pear half with ricotta filling. Sprinkle with a light dusting of cinnamon.Bake, uncovered, until fruit is softened and pale golden, 20 to 25 minutes more.  Enjoy warm or cool.
