kohlrabi slaw

The rain held off this weekend and we were able to hold the CSA Welcome pot-luck!

Elaine & James opened their yard to our members. The kids enjoyed the pool and tree house while adults chatted, toured Elaine’s abundant garden and ate delicious homemade dishes: Blueberry muffins, pasta salad, sandwiches and salads. Every dish gave inspiration for future meals.

Elaine created a Kohlrabi slaw from Kohlrabi grown in her garden plus the goodies from the farm. See photo & recipe.

Kohlrabi Slaw

4 kohlrabi, peeled and shredded
2 carrots, shredded
6 radishes, shredded
1/2 yellow bell pepper, chopped
10 cherry tomatoes, cut in half
2 scallions, sliced

1/4c mayo
1/4c plain yogurt
2 tbsp red wine vinegar
2 tbsp chopped fresh parsley
1 tsp dried dill
1/4 tsp salt
1/4 tsp ground cumin
black pepper to taste

Prepare vegetables.  Mix dressing and stir to coat veggies.  Marinate in fridge for an hour or more. The secret is the dressing. You could use a wide variety of veggies.

farm - fresh potato salad

Noemi made a wonderful potato salad with the fresh potatoes, snap peas, carrots and herbs from the farm. Elizabeth & Larissa made homemade bread, smoked cheese and a fruit tart. This weekend members shared successful recipes made with their CSA produce that might give you some ideas:
